Protein Pancakes
2 cups of egg whites (can use egg beaters if you wish)
1/2 cup of fat free cottage cheese
1.5 - 2 cups of old fashioned oats (add slowly to achieve desired thickness)
3-5 dropperfuls of your favorite flavor of the liquid stevia (vanilla) www.sweetleaf.com
Place in high powered blender and mix ingredients until pancake batter consistency. Cook like regular pancakes.
For variety, you can add fruit, canned pumpkin. My favorites are banana, or canned pumpkin.
Spice Up Your Oatmeal
1/2 cup Old Fashioned Oats
Half dropperful of Stevia
1 Teaspoon of pumpkin spice*
Cook like you normally cook oatmeal
*Can use Apple Pie Spice, Cinnamon,
*Apple Sauce & Apple Pie Spice are good together too
Sweet Potatoes for the Entire Family
Cut Sweet Potatoes into Wedges, spray with extra virgin olive oil*. Place on sprayed (with EVOO) cookies sheet. Sprinkle with Kosher Salt. Cover with aluminum foil and cook at 450 degrees in the oven for 45-60 min. Uncover and brown for 10-15 minutes. (Try with white potatoes too)
*For an especially sweet treat, use extra virgin coconut oil instead.
Easy Chicken Seasoning
Garlic Salt, Pepper, Oregano, Fresh Lemon/limes, Extra Virgin Olive Oil
Depending on the amount of chicken breast, place the chicken in a zip lock bag, season to taste. Marinade overnight. Grill indoor/outdoor.
Bunless Burgers
90% Lean Ground Meat, Season with Kosher Salt, Grill indoor/outdoor. Serve with steamed veggies like a steak. (Broccoli, Asparagus, Romaine Lettuce, Tomato).
Meatloaf Idea: Use Old Fashioned Oats instead of Breadcrumbs for a tasty and nutritious treat, add canned organic flavored tomatoes for variety. i.e. Italian flavored, Mexican flavored.
Spice up Your Brown Rice & Grilled Chicken with Homemade Salsa
Roast/Grill Roma Tomatoes, Habanero Peppers, Onions. Place all veggies in blender after roasting, add fresh cilantro and blend.
Omelet Ideas: Scramble 4 eggs, 1 yolk: Add cottage cheese for fluffy eggs & extra protein. Add potatoes for a hearty breakfast meal. Add spinach, broccoli crowns, asparagus tips to scrambled eggs. Use salsa on your eggs for variety.
Nutritiously Balanced Angel Eggs
Hard Boil As many eggs as you would like to make (take out yolks), and fill with fresh hummus, sprinkle with paprika, and chill. Great protein, carbohydrate and great fat.
Homemade Spaghetti O’s for Kids (Parents enjoy these too!) I use wheat shells, rigatoni, etc. For the sauce, use organic creamy tomato soup in box container, and parmesan cheese. Add frozen meatballs found in the frozen section at Whole Foods or Trader Joe's.
